Its a rainy morning... might be a good day to start house cleaning,see how that goes with the kids inside:( Steve shot 2 deer this fall and we usually like to get summer sausage made..its a good snack for the boys and healthier than chips and other junk , plus im not a big fan of cooking with venison:( well he butchered them himself with the help of some other guys and took it down to the shop, they said they cant make it if they dont butcher it there...so we just got it all ground to put in the freezer.... i googled some things and checked pinterest and it didnt look to hard to make, so i tried it and it passed the test with my tough food critics:) didnt try any myself but they love it and it gets rid of the gr meat:) here is the recipe.... 1 cup cold water, 3 TBLSP.mortons tenderquick, 2 tsp mustard seed [i used gr mustard] 1 tsp garlic powder, 1 tsp pepper, 2 tsp. liquid smoke. 3 lbs venison, 1 cup shredded cheese, 2 jalepeno peppers[i skipped the cheese and peppers so my kids would eat it, i did add hot pepper flakes and a little onion salt] mix it all together until the mixture is dossolved , then add venison and mix really good, put in refrigerator for 24 hrs...... preheat oven to 300deg rol meat into 2 logs try to pack together as much as you can i use saran wrap and kinda roll it for awhile...line a baking sheet with foil and bake for 2 hrs..
